About the farmer and farm

El Paraiso sits in Barcelona, Quindío department, in the heart of Colombia's Coffee Belt (Eje Cafetero).

The roughly 25-hectare farm was purchased in 2015 by Arturo Arango, part of a younger generation of producers with a background in business administration and agribusiness.

After studying in Argentina, Arturo became interested in specialty coffee and returned to Colombia to apply what he'd learned on his own farm, gradually renovating its aging coffee plantings.

Arturo processes his coffee in partnership with Cofinet's La Pradera processing center.

Processing: honey with wine yeast and rose

Ripe cherries are transported to La Pradera in GrainPro bags, where flotation selects a uniform batch of fruit.

The main stage is 72 hours of dry anaerobic fermentation for whole cherries, during which crushed rose petals and wine yeast are added to the environment to build a floral profile reminiscent of rose tea.

After fermentation, the cherries are depulped, deliberately leaving the mucilage on the bean, which dries alongside it on traditional elbas drying platforms.

Drying takes about 8 days until reaching 9.5-11% moisture.
