About farmer and farm:
Deri Kidame Washing Station is composed of 181 drying beds and a dozens fermentation tanks for experimental processes.
Kenzu Ahmed is the station manager. He has been working in the Hambella area for 3 years now and has been sourcing his coffees very carefully. He only chooses farmers and red cherry suppliers who bring high quality cherry from experience.
Process: Anaerobic natural 96hrs
4-8 hours after harvest cherries are sorted.
Then put in fermentation tanks for 96 hours in controlled room for slow and consistent fermentation.
After that is drying stage on raised beds.
