About the farmer and farm
The Kibingo washing station is located in the Kayanza commune in northern Burundi, at 1893 meters above sea level.
The station serves 1,739 registered farmers spread across 18 hills in the area, each owning an average of 300 trees.
Most trees in Burundi are Red Bourbon. The station helps farmers renew aging plantings by providing subsidized seedlings from its own nursery.
Kibingo operates in partnership with Greenco, which has supported 13 washing stations in Kayanza province since 2015.
Processing: natural with yeast inoculation (Intenso)
Ripe cherries are hand-picked, usually by the whole family.
Freshly picked cherries go into containers with Intenso yeast (Saccharomyces cerevisiae) from the French company Lalcafe and ferment for about 36 hours.
This specially selected yeast helps control fermentation, guards against spoilage organisms, and brings out the coffee's fresh, fruity character.
After fermentation, the cherries dry on tables for 2–3 weeks. They're turned regularly and covered in the evenings and during rain for even, controlled drying.
