About the farmer and farm
Finca El Rosal sits in El Rosario, in the municipality of Acevedo, Huila department, at 1650 meters above sea level, across 10.5 hectares.
The farm was purchased in 2006 by Wilmer Cubillos, a first-generation farmer who lives there with his wife and youngest son.
It grows the Castillo variety, which combines high yield and resistance to coffee leaf rust with strong cup-quality potential.
Wilmer's goal is to produce coffee with a distinct, differentiated flavor worthy of international attention.
Processing: natural
Wilmer keeps refining his process. He's bought a shaker to help separate parchment and lined his fermentation tanks with slab plating to avoid off-flavors during fermentation.
Ripe, red cherries are selectively hand-picked and sun-dried right on the farm, raked frequently to ensure even drying.
