About the farmer and farm
The Guji Shakiso washing station is located in Shakiso kebele, in the Guji zone, at 2095-2122 meters above sea level.
Average temperatures here range from 17 to 20 °C, with about 878 mm of rain a year.
Fertile red-brown soils and natural shade from cordia, acacia, and enset help retain moisture and soften direct sunlight.
The station buys coffee from local farmers, and this lot uses the Geisha variety.
Processing: anaerobic fermentation
Ripe cherries are hand-picked and sorted at the station to remove underripe and damaged fruit.
The coffee ferments in sealed tanks with limited oxygen, with temperature, acidity, and fermentation time closely monitored.
After fermentation, the coffee dries in a thin layer on raised African beds, turned regularly for even drying.
