About the farmer and farm

Elkin Guzman grows coffee on his 31-hectare farm, Finca El Mirador.

Thanks to sufficient altitude and fertile soils, the Huila region is exceptionally well suited to growing high-quality coffee.

This lot uses the Catiope variety, an arabica cultivar resulting from a cross between Caturra and a local Ethiopian variety.

Catiope trees are fairly low-growing, allowing dense planting, and the cherries ripen evenly with a sugar level of 20–22° Brix.

Processing: anaerobic natural, 140 hours with added yeast

Ahead of harvest, Elkin prepares a special "mother culture" starter of bacteria and yeast, fermented anaerobically. Strawberry and blueberry are added to it later.

The ripe cherries are hand-picked and sorted.

They're washed and placed in 200-liter tanks pre-loaded with 80 liters of the starter culture, and fermented for 140 hours.

The coffee is sun-dried afterward, turned 4–6 times a day for even drying. The whole process takes 12–18 days.
