    About the farmer and farm

    Gaitania is a village in the Planadas municipality, Tolima department, a region with a storied past as a former shelter for political prisoners from the Liberal party.

    Over time, the Liberal and Conservative parties built a good relationship there, which is why people from Planadas are known throughout the country for their kindness.

    This coffee is grown by the indigenous "Nasa Wesx" community of Gaitania, a people who live across territories in the Cauca, Huila, and Tolima departments.

    The coffee grows at 1700–1900 meters above sea level on volcanic soils, using the Caturra and Typica varieties.

    Processing: natural

    The cherries are processed using the natural method — whole fruit, without depulping.

    The local climate, with temperatures of 16–22°C, supports slow, even ripening of the fruit and drying of the beans after harvest.
