About the farmer and farm
Elkin Guzman grows coffee on his 31-hectare farm, Finca El Mirador.
Thanks to sufficient altitude and fertile soils, the Huila region is exceptionally well suited to growing high-quality coffee.
This lot uses the Catiope variety, an arabica cultivar resulting from a cross between Caturra and a local Ethiopian variety.
Catiope trees are fairly low-growing, allowing dense planting, and the cherries ripen evenly with a sugar level of 20–22° Brix.
Processing: anaerobic natural 36 hours, then 80 hours in a cold room
The cherries are hand-picked and sorted.
They're treated with a citric acid solution for disinfection.
The coffee is oxygenated in plastic bags for 36 hours, then moves to baskets in a 10°C cold room for another 80 hours of fermentation.
Afterward, it's dried for about 35 days, with turning every 3 hours.
