About farmer and farm:
Deri Bishan Figu Station is composed of 140 drying beds and a dozens fermentation tanks for both anaerobic and carbonic maceration processes.
This station produces very complex natural coffees due to the red brown soil that is very fertile but also the high altitude levels making the coffees mature slowly.
Apart from the high altitude, coffee trees are relatively very young and picking is also done at a much better rippenes than other areas.
Process: anaerobic natural 192 hrs
Cherries hand picked and sorted. Then sealed and fermented in barrels for 8 days in anaerobic environment.
After that cherries going through drying stage on raised beds before moisture level hit 10-12%.
