This altitude is perfect for cultivation high quality coffee.
Process: thermal shock, anaerobic natural+wine yeast
Coffee cherries handpicked, sorted and sterilised.
After that coffee submerged under 90 degrees water for 30 seconds and then depulped.
Next goes control 96 hours fermentation in special tanks, were also wine yeast added.
In the end - drying stage at 38 degrees Celsius.
