About farmer and farm:

Owned and operated by producer Juan Silvestre, the farm located in the mountainous terrain of
Las Botijas, within the La Paz department of Honduras.

An elevation of approximately 1,700 meters above sea level providing ideal conditions for cultivating specialty coffee.

High altitude and cool, mountainous climate contribute to the slow developmend of coffee cherries, enhancing the presence of complex flavors.

Las Botijas is part of the renowned Montecillos coffee-growing region, known for its
unique microclimates and fertile soils.

Process: honey

Honey processing originated in Costa Rica in order to use less water.
This hybrid of washed and natural processing produces cups that are fruity sweet with great texture and sugar browning flavors and has helped producers differentiate their coffees and appeal to consumers.
For these reasons, honey processing has gained popularity throughout the coffee-growing world,
especially in Central America.

Small quality-focused producers in Honduras have recently started adopting the process
resulting in cups that elevate the citric and nutty washed Honduras profile with more fruit and floral flavors.
