About the farmer and farm
Kii Factory is owned and operated by the Rungeto Farmers Cooperative Society (FCS), known for the high quality of its coffee.
The factory was built in 1995 at the foot of Mt. Kenya. It takes both its name and its clean washing water from the nearby Kii River.
More than 850 Rungeto members deliver cherry to Kii, each farming an average of 250 trees on less than a hectare.
This lot uses the Batian, Ruiru 11, SL28, and SL34 varieties, grown at 1310–1900 meters above sea level.
Processing: washed
Smallholders selectively hand-pick only ripe cherry and deliver it to the factory. The cherry clerk strictly sorts for dense, ripe fruit at intake.
After intake, the cherry is pulped and fermented for 16–24 hours, depending on ambient temperature.
It's washed in clean water from the Kii River and soaked for 12 hours, then laid out to dry on raised beds for about 14 days, raked frequently for even drying.
