About the farmer and farm

Elkin Guzman grows coffee on his 31-hectare farm, Finca El Mirador.

Thanks to sufficient altitude and fertile soils, the Huila region is exceptionally well suited to growing high-quality coffee.

This lot uses the Tabi variety, an arabica cultivar descended from Typica, Bourbon, and Timor.

Processing: experimental lactic fermentation

Only the ripest cherries are hand-picked and sorted.

The coffee goes into fermentation tanks in an anaerobic environment for 60 hours.

It moves to a larger tank next for another 60 hours of intensified oxygenation, with small amounts of 35–40°C water added throughout. To stop the process, the cherries are washed with cold water for 8 hours.

Finally, the coffee is sun-dried for 18–24 days.
