About the farmer and farm
Shakiso is a well-known coffee district in the Guji zone of southern Oromia, where coffee grows at 1800-2200 meters above sea level.
Coffee from Guji used to be sold under the broader Sidamo name, but as traceability improved, the region came to be recognized on its own.
Fertile red-brown soils and a layered agroforestry system, with coffee growing alongside shade trees and food crops, help keep moisture in the ground.
The coffee is grown by small family farms, and this lot uses local heirloom varieties.
Processing: anaerobic
Ripe cherries are hand-picked and sorted to remove underripe, overripe, and damaged fruit.
The selected coffee goes into sealed tanks, where it ferments without oxygen with the help of natural yeasts and bacteria.
After fermentation, the coffee dries on raised African beds with regular turning and rests to stabilize before dry milling.
