About the farmer and farm
The Cyato washing station is located in Rwanda's Western Province.
Founded in 2017, it now works with more than 25 smallholder producers.
Processing: anaerobic natural
The cherries are hand-picked and delivered to the washing station.
They're sorted to remove any underripe fruit, and the selected cherries go into sealed fermentation tanks.
Fermentation takes place in an oxygen-free environment for 24–72 hours. Specific yeasts and lactobacilli
develop the coffee's flavor and aroma during this stage.
After that, cherries spread out on raised beds and dried for up to 30 days.
