About farmer and farm:

Hacienda Sonora settled in Alajuela, Grecia in Costa Rica at 1,300 meters above sea level.

It is owned by Alberto and Diego Guardia. Hacienda Sonora has been in Alberto’s family for over a century.

The farm currently has over 20 coffee varieties in production, including the Red Catuai.

The farm and its mill cover approximately 100 hectares. Of those, 45 hectares are devote to shaded coffee lands.

Here, coffee processed mostly as honey or natural, to decrease use of clean water.

Process: anaerobic natural

After selective handpicking and sorting, cherries put into anaerobic environment to ferment.

Then cherries go to patio for drying for 9 days, where they are turned frequently to promote even drying.
